Welcome to Emerald Maldives Resort & Spa, a haven of luxury and natural beauty nestled in the heart of the Maldives. Our commitment to redefining elegance led us to an extraordinary endeavor – the world of underwater wines.
The Depths of flavour
How It All Begun:
Our passion for wine led us to explore new ways of enhancing its quality and character. We realized that the ocean could be the perfect environment for wine maturation, as it provides constant temperature, subdued light, and delicate oxygen levels. We also wanted to infuse our wines with a touch of marine magic, creating a unique sensory experience for our guests.
We partnered with Caviro, Italy’s renowned wine cooperative, to select the best grapes and craft the finest wines. We then submerged them in stainless steel cages 30 meters deep in the Indian Ocean, where they aged gracefully under the sea. This process resulted in wines that are rich, complex, and harmonious, with a distinctive marine note.

Underwater wines are shaped by the oceanic forces that surround them. The gentle caress of sea currents, the embrace of pressure and gravity, and the dance of tides and moon phases create a symphony of flavors that enhance the wine’s character. Underwater wines also benefit from the absence of external factors that can affect land-based wines, such as light, heat, and vibrations.
Our underwater wines are carefully monitored by our team of experts, who ensure that they reach their optimal maturation point. We use state-of-the-art technology to track the temperature, salinity, and oxygen levels of the water, as well as the pressure and movement of the cages. We also conduct periodic tastings to evaluate the wine’s evolution and quality.
